Foreword Dedication [for Country Life Cookbook]

There is no doubt, that eating food as close to its natural state as possible, is better for our health. History shows that before the Industrial Revolution, which created most of our processed food, we as humans enjoyed better health with less disease.
A few of the problems that arise as people change their diet to a healthier, whole food eating plan is “What do we eat”?, and “ How can we make it taste nice”? and “ I don’t have time to be in the kitchen all day”. It is a common problem for the Health coach, which is where we need to step in and take a role as a Social Worker. The Social Worker plays an important role in showing the patient in hospital, how they can implement the tools they have learnt into their everyday life.
I believe Peggy has done this in her cook book. She shows how a person, even with a busy schedule, can change their eating plan into a tastier, healthier and yet easy part of their life. Peggy’s many years of managing and cooking in her restaurant has proved to thousands of happy customers that she has the answers to these questions. Having stayed in Peggy’s home, I can testify that she is a busy lady, and yet she has time to cook beautiful food. I can also testify that her food is healthy and fresh and tastes fantastic.
God gave us taste buds for a reason, food must taste good. One of the keys to this is good quality produce. Also fresh produce. Peggy tries to use as much locally grown produce as is possible. Seasons allowing. Top quality ingredients, this includes not only the fresh produce, but also quality oils, salt and herbs. Peggy’s philosophy is based on the bible, as is mine.The fact that God created our bodies with an inbuilt ability to heal itself. The healing is guaranteed when the right conditions are supplied by the owner.

Peggy has made Nutrition easy for us. She has shown how to make simple, healthful and yet tasty food in this volume. Yet, this is not just a cook book, or even just a nutrition book, but Peggy has also included little antidotes and inspirational quotes to cheer and encourage our path through life.
Thank you Peggy. May many be blessed through this book, and as the body begins to work more efficiently, and the mind will becomes clearer, that our walk with God will become deeper and more meaningful.
